Vegetable Kurma


Ingredients

  • Onion 1
  • Tomato 1
  • Carrot 2
  • Beans
  • Fresh peas
  • Potato 2
  • Curry leaves
  • Fresh Coriander leaves

For Masala

  • Coriander seeds 2 tbsp
  • Jeera 1 tbsp
  • SenagaPappu or bengal gram 1 tbsp
  • Minapappu or Urad dal 1 tbsp
  • Salt
  • Redchillies or Greenchillies
  • Cinamon stick 1/2 inch
  • Cloves 2
  • Elaichi or cardamon 1
  • Pepper or miriyalu 5-6
  • Cashew 5 (optional)
  • Dry or Fresh Coconut (optional)

Procedure

  • Dry roast all the Spices and blend them.Keep it a side
  • In a Cooker or Kadai heat 1 tbsp oil , add mustard ,Jeera and curry leaves.When they start splutter add all the veggies(You can use choice of your veggies) and cook only for 1 Whistle if using cooker or In kadai cook till veggies are soft.
  • Now in cooked veggies add the blended masala powder ,mix well and cook for 5-7 mins
  • Garnish with coriander.
  • Serve hot with poori or chapathi
