Tomato Pickle(Sun Dried)

Ingredients

  • Tomatoes ripe 1 KG
  • Mustard powder 25 gms
  • Red Chilli powder 100 gms
  • Menthi powder 1 tsp
  • Tamarind 100 gms
  • Salt 100 gms
  • Turmeric

For Seasoning

  • Oil 
  • Mustard Seed
  • Jeera 
  • Garlic cloves (Optional)
  • Curry leaves
  • Hing
  • Bengal Gram
  • Black Gram or Urad dal

Procedure

  1. Cut tomatoes into cubes.In a Bowl add chopped tomatoes , salt and turmeric .Mix Well and keep it a side for 2 hours
  2. After 2 Hours , squeeze out the juice from tomatoes and place it in a plate , spread them and dry under sunlight for 2 days or till tomatoes are dried
  3. Take Left over tomato juice in a vessel ,add tamarind and cover it with a muslin cloth and place it in sun light for 1 day.

  5. First blend  the dried tomatoes into coarse powder ,add this into tomato and tamarind (Juice)mixture.Also add Menthi powder ,Red chilli powder and Mustard powder.Mix Well
  6. Now Take small quantity of above mixture blend them ,repeat the same process
  7. In a Kadai heat oil add mustard , jeera  when they splutter add Bengal Gram and Black Gram fry for 2 mins add hing and curry leaves.Switch off the flame and Cool completely
  8. Once the seasoning is cool add this to tomato paste
  9. Tomato Pickle is ready.Store it in Air tight glass container.
