Maddur Vada


 Ingredients

  • Rice Flour 1.5 cups
  • Maida 1/2 cup
  • Bombay Rava/Sooji 1/2 cup
  • Ghee 2tbsp
  • Hot oil 1 tbsp
  • Salt
  • Onions 3/4 cup finely chopped
  • fresh Coriander 1 bunch
  • Curry Leaves few 
  • Ginger 1 inch
  • Green Chilli paste 2 tbsp or as per taste
  • Water for kneading
  • Oil

Procedure

  1. In a Large bowl ,add Rice flour,Maida,Rava,Salt and add hot ghee and oil and mix well
  2. Now add chopped onions,ginger,coriander ,green chilli paste and curry leaves and mix
  3. Now take in small quantity ,add little water mix well and make a soft dough.(Don't add too much water)
  4. Grease hands with oil and pinch  small lemon sized dough
  5. Take a Butter paper or any plastic sheet.Grease it with oil and flatten the dough on it.
  6. Heat oil in a Kadai , add them in batches and cook on medium flame.Flip them in middle
  7. Cook till maddur vada turns into golden color and crisp.
